Heh. Some 20 years ago when I was a resident of a dormitory at a large Eastern university, they did exactly the same “in honor of Black History Month” menu. The Black students’ responses ranged from amused to mildly irritated (“It won’t be anything like what my grandma used to make; you see the slop they call ‘jambalaya'”) to confused (“Collard greens? I don’t even know what those are.”)
This was a university known for its strides in the field of Political Correctness, incidentally.
I will note they did not do any special menus for Women’s History Month, which allegedly falls in March.
